She {hearts} Lilla Rose

This summer I discovered a hair accessory that I thought was gorgeous and also really practical.  Lilla Rose sells something called a Flexi Clip, which can be used for a variety of hair styles and in pretty much every hair type.  I have incredibly fine thin hair that is very slippery, and I can easily use the Flexi.

Lilla Rose is an independent sales company, so anyone can sign up to sell their products.  I got in touch with Anjanette Barr through YouTube I believe, and was able to place an order earlier in summer.  She recently sent a beautiful Pink Fairy Flexi for my oldest daughter to try.  Bria loves it!  I have to work a little more to get it to stay in her hair, as it’s even more slippery than mine, but it looks so cute on her!

Flexi clips are made with piano wire, beads, and a pin made of zinc.  They are incredibly durable, so you won’t be replacing them over and over again.  All pieces are attached to each other as well, which makes it easy to keep track of.

She {hearts} Whole Wheat Dinner Rolls

The other day I was in the mood for some nice soft dinner rolls to go with our Minestrone.  I searched online to find a recipe that I thought might work, and of course, decided to tweak it a bit to make it my own.  The original recipe can be found here.

Soft 100% Whole Wheat Dinner Rolls

Cook Time: 25 minutes

Yield: 24

  • 2 Tb. dry yeast
  • 1/2 c. warm water
  • 1/2 c. butter, softened
  • 1/4 c. honey
  • 3 eggs
  • 1 cup buttermilk or milk
  • whole wheat flour (I used freshly ground hard red wheat)
  • 1-1/2 tsp. salt
  • 1 Tb. vital wheat gluten
  • 1/4 tsp ground ginger
  • 1 scoop vitamin C powder
  1. Warm the milk or buttermilk until scalded. Add to the bowl of a stand mixer.
  2. Add water, softened butter, salt, honey, eggs, ginger, gluten, and vitamin C to the bowl.
  3. Add 4 cups of flour to the bowl, and sprinkle the yeast on top. Start the mixer on low speed and mix until combined.
  4. Slowly add flour until the dough cleans the sides of the bowl.
  5. Let knead for approx 10 minutes.
  6. Grease a 9x13 inch pan.
  7. Divide the dough into 24 pieces and place them in the pan close together.
  8. Let rise in a warm place for 45 min to an hour.
  9. Preheat oven to 350 degress.
  10. Bake for 20-25 minutes or until golden brown.

Keith and I have been married for just over 9 years.  In that time, the two of us have broken a bunch of our dishes.  I’ve been on the lookout for something to replace them with, and I came across Fiesta Dinnerware.

Fiesta sent me a set of 4 salad plates in the sunflower colour to try out.  We’ve enjoyed using them, and the colour is certainly a nice pop of sunshine on the table.  These plates are the perfect size for a toddler to eat off of, and sturdy enough that I’m not too worried about them breaking.

She {hearts} Black Bean Dip

Summer may be drawing to a close, but I still enjoy some of our favorite summer recipes.  One that is a real hit at our house is Black Bean Dip.  We eat it with tortilla chips, inside a pita, or just as a salad.  Any which way, it’s delicious and full of fresh ingredients.

Black Bean Dip

  • 2 medium avocados, peeled and diced
  • Juice of one lime
  • 1 can corn, drained
  • 1 can black beans, drained (or two cups of cooked black beans)
  • 1 medium red pepper, chopped
  • 6 green onions, chopped
  • 2 Tbsp fresh cilantro, minced
  • 2 Tbsp olive oil
  • 1 tsp red wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper

Stir the avocado with the lime juice, then add all over ingredients and stir well.  It tastes great fresh, but it’s even better if it’s refrigerated for an hour or two first.

It’s so much fun to browse through Pinterest and find all the yummy looking recipes.  But how often do we actually MAKE those recipes?!  I confess that more often than not I pin and forget.

I do have a bunch that I have tried though, and I figured I would post the links to my favorites!  These are definitely worth trying.

 

First is the World’s Best Chicken Recipe.

It really lives up to it’s name!

Hubby devoured it, and was super impressed.

And it’s e.a.s.y.!  Seriously, you must try this one.

 

 

Next is a delicious Cobb Salad from Tammy’s Recipes.

Tammy has some of our favorite recipes on her site,but this is one that I hadn’t tried yet.

We gave it a go earlier this summer, and we’ve had it a couple times since then.

It’s a lot of chopping ingredients, but totally worth it!

One that we just had this week was Crispy Southwest Chicken Wraps.

I’ve made them once before, and they are becoming a favorite.

I love that they use healthy ingredients.

 


Healthy Chocolate Peanut Butter Fudge is easy and delicious.

And a meal isn’t complete without dessert, right?  I’ll leave you with two.

I like to have them in the fridge for a quick snack during the day.

I think I need to make them again!

Lastly, is a totally not healthy, but fantastic recipe for Exactly Two Chocolate Cupcakes!

This is perfect for a date night in, or for when you have just one friend over.

And it’s so fun to measure ingredients for just two cupcakes!

She {hearts} BBQ Chicken & Pineapple Pizza

A few months back I decided it was time to make pizza with something other than pork.  Of course, everyone loves pepperoni and bacon, ham & pineapple, etc, but I don’t think it’s healthy and I figured I could find something that was still delicious, but a bit healthier.  This is one of our favorites!

BBQ Chicken & Pineapple Pizza

Crust:

  • 1 cup warm water
  • 1 1/2 tsp salt
  • 2 Tbsp olive oil
  • 2 cups flour (I did half all-purpose and half freshly ground whole wheat.)
  • 2 tsp yeast

Toppings:

  • 3 diced chicken breasts, browned
  • 1/3 cup BBQ sauce (More or less to taste.  Just make sure the chicken is well coated and won’t dry out.  We like a spicier BBQ sauce.)
  • 1 cup diced fresh pineapple
  • 1/4 cup diced onions
  • 1/2 cup diced bell pepper
  • 1/2 cup pizza sauce
  • 2-3 cups grated cheese (I did half mozzarella and half sharp cheddar.)

Start by making the dough for the crust.  Add the water, salt, oil, flour, and yeast to a mixing bowl.  I use my Kitchen Aid to make things easier.  Mix really well, and add flour if it’s too sticky or runny.  Knead for 7 or 8 minutes or until smooth and elastic.  Place the dough in an oiled bowl and let it rest until you are finished chopping/cooking toppings.  At this point you can preheat the oven to 425.

Dice the chicken and saute it in olive oil until just cooked through.  Turn off heat and stir in BBQ sauce.  Dice the pineapple, onions, and peppers, and shred the cheese.

Roll out the dough onto a greased pizza pan.  I use a large Pampered Chef pizza stone.  Spread pizza sauce over the pizza.  Sprinkle just a handful of cheese over the sauce.  Sprinkle onions, peppers, and chicken over the dough.  Top with cheese, and then the pineapple on top of the cheese.

Bake for 15-20 minutes, depending on how your oven bakes.  Just take it out when the cheese is bubbling and the bottom of the crust looks done.

I have always loved travelling, but I haven’t always loved packing! It can be frustrating when I can’t find what I’m looking for in my bag, or my clothes are getting all wrinkled and disorganized. I find it even more frustrating when I’m packing for my kids.
