We are big meatloaf fans in our family! When I found this recipe on Pinterest (originally from www.icanteachmychild.com), I knew we had to give it a try!
I normally make a big meatloaf, but EVERYONE said that these were better. So, this recipe is a keeper in our family and I wanted to share it with you!

Ingredients needed for Mini-Meatloafs:
- 2 lbs ground beef
- 1/4 tsp chili powder
- 1/2 cup ketchup
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 medium onion, chopped
- 1beef bouillon cube, ground
- 1 tsp Worchestershire sauce
- 1/2 cup bread crumbs
- 1/2 cup oatmeal
- 2 eggs
- 1 tsp mustard
Ingredients for Sauce:
- 1/2 cup ketchup
- 1/2 cup brown sugar
- 1 tsp mustard
I love that most of the ingredients I always have on hand, and on top of that, the recipe is easy! It can be assembled during the kids’ naptime and then just baked before dinner :) All you do is:
- Combine all the ingredients for meatloaf, using your hands.
- Form into small balls and put in greased muffin tins (made 18 meatloaf muffins).
- Top each mini meatloaf with 1 tbsp of the sauce (mixed separately).
- Cook at 350 for about 30 minutes, or until no longer pink in center.
All 18 mini meatloafs were gone in no time, and given the thumbs-up approval from our family! I hope you enjoy them as much as we did!

Thanks for sharing, definitely will be trying this one! In our family this will probably last about three days :) I’m not a big meat eater, so it’s just my husband and my ‘not-so-big-on-meat-either’ two year old.
