I cook the same way I “create” {paint or make jewelry} I don’t like to repeat myself. So my poor family will love a particular meal and I’ll just keep making up new ones. My short attention span is probably to blame or maybe it’s that I’m just too dang creative. I would like to pretend it’s the latter.
This delicious recipe was introduced to me by one of my dearest friends in the whole wide world. I had the pleasure of her making it for me this past June, while she was in town visiting us. It is so mouth-watering good! In fact, I can’t help but salivate when I look at that picture I snapped above:) Look at it again, I bet your mouth waters! Yep. Told ya;)
Okay, here’s how it’s done.
Ingredients:
4 boneless chicken breasts {organic if you can}
1 pkg. McCormick grill mates Mesquite marinade {this was my added touch, habit really-but yum}
8 tablespoons/give or take of each:
goat cheese
diced marinated sun-dried tomatoes
diced marinated artichoke hearts
crumbled cooked bacon
Directions:
Prepare marinade according to directions (calls for oil and water). Let Chicken marinade covered in fridge for at least 15 min. Prepare the other ingredients. This is fun, you can pretend you’re doing a cooking show and have all your ingredients in separate ramekins.:) Grill Chicken on high, just long enough to get some nice grill marks. You want the inside to still be raw. Once chicken is cool enough to touch, slice length-wise, but not all the way through.“Open” like a book. Then begin to stuff all your ingredients. The goat cheese {once melted} will hold it all together nicely. Foil-line cookie sheet and spray with cooking oil. Bake for approximately 40 min on 350. I always cut chicken to check if it’s done- never can be too safe!
My family loved this recipe. And since I am posting it, I will be more likely to make it again, but I better hurry before I forget!;)

:) Thanks, I’m glad you think so too! I think it’s pretty healthy. Using center-cut bacon or turkey bacon and not overloading on the amount. Not to mention goat cheese is one of the healthiest cheeses out there.
