She {hearts} New Flavors From Peter Rabbit Organics

Jayden recently received another care package from Peter Rabbit Organics, which was a pleasant surprise! For those of you who aren’t familiar with the little delectables, they are a line of pureed fruit and vegetable pouches made with 100% organic ingredients and they are free of added sugars and artificial additives. Jayden absolutely loves them. He refers to them as his “baby food”.

In his recent package, he received five new flavors; Peach and Apple, Banana and Apple, Pear and Apple, Pear and Pea, and Pumpkin, Carrot and Apple. He gobbled them all down before I could take a presentable photo for this post… so my words will have to do :-).

Peter Rabbit Organic squeezable pouches are super convenient as they don’t require refrigeration. They are delicious chilled or at room temp. They are the perfect healthy snack to take to the zoo, beach, or family road trip this summer!

Nourish Organics is a company near and dear to my heart.  Created by a mom trying to find a product to soothe her baby’s eczema and food allergies, now owned and run by two sweet ladies, Raechel and Olivia.  Nourish Organics’ mission is to use “simple but effective” ingredients and their entire skin care line contains 99% or higher certified organic ingredients that are 100% natural.

 

I have tried and own almost every product in Nourish‘s line.  I may or may not be a teeny bit obsessed.  Both of my kids have eczema and very sensitive skin, and nothing soothes those dry patches than the yummy-smelling organic coconut balm.

 

Not much is better than a calming bath with a capful or two of the organic lavender oil.  The organic lip balms are smooth, insanely hydrating, and smell delicious.  And the organic coconut wash reminds me of a little tropical getaway while leaving my skin so soft and moisturized.

Drumroll, please.  My FAVORITE favorite product?

The organic sweet orange sugar scrub.

The name alone deserves its own paragraph!  Just a little scoop and scrub leaves my feet and legs so smooth and moisturized, and I definitely don’t even need lotion after using it in the shower.  After chasing two toddlers all day, there’s nothing like a mini spa experience for this tired momma’s feet.  And the sweet orange scent?  Delicious and refreshing.

Jayden loves showing off his personality through his clothing choices. He loves picking out what he wants to wear and he gets so excited whenever he gets new clothes! His most recent article of clothing came from clothing company, My Kinda Style. They sent over their super soft organic cotton Cool Kid tee. It reads “I’m a cool kid” (Which Jayden most certainly is!) in graffiti font, designed with stars and a pair of aviator shades. Very cool!

I cook the same way I “create” {paint or make jewelry} I don’t like to repeat myself. So my poor family will love a  particular meal and I’ll just keep making up new ones. My short attention span is probably to blame or maybe it’s that I’m just too dang creative. I would like to pretend it’s the latter.

This delicious recipe was introduced to me by one of my dearest friends in the whole wide world. I had the pleasure of her making it for me this past June, while she was in town visiting us. It is so mouth-watering good! In fact, I can’t help but salivate when I look at that picture I snapped above:) Look at it again, I bet your mouth waters! Yep. Told ya;)

Okay, here’s how it’s done.

Ingredients:

4 boneless chicken breasts {organic if you can}

1 pkg. McCormick grill mates Mesquite marinade {this was my added touch, habit really-but yum}

8 tablespoons/give or take of each:

goat cheese

diced marinated sun-dried tomatoes

diced marinated artichoke hearts

crumbled cooked bacon

Directions:

Prepare marinade according to directions (calls for oil and water). Let Chicken marinade covered in fridge for at least 15 min. Prepare the other ingredients. This is fun, you can pretend you’re doing a cooking show and have all your ingredients in separate ramekins.:) Grill Chicken on high, just long enough to get some nice grill marks. You want the inside to still be raw. Once chicken is cool enough to touch, slice length-wise, but not all the way through.“Open” like a book.  Then begin to stuff all your ingredients. The goat cheese {once melted} will  hold it all together nicely. Foil-line cookie sheet and spray with cooking oil. Bake for approximately 40 min on 350. I always cut chicken to check if it’s done- never can be too safe!

My family loved this recipe. And since I am posting it, I will be more likely to make it again, but I better hurry before I forget!;)

She {hearts} Chocolate Kale Chips

Kale has been my go-to veggie for the last couple years now! I put it in all of my smoothies. It’s loaded with anti-inflammatory antioxidants and has some amazing health benefits, right up there with blueberries (which is my go-to fruit). Rarely do I miss a day of these two super foods! And if I do, my body gets mad…no joke. I try my best to keep my body happy.

I know you do too, so I wanted to share with you a fun way I just discovered to eat my greens. ;) Some of you “veggie-challenged” people out there might even like this recipe, don’t knock it ’til ya try it! :)

Chocolate Kale Chips

Ingredients

1 bunch kale, stems discarded and leaves torn into roughly 1 1/2-inch pieces. You can use the “curly” kale which is easier to find and just as good for you, but I used Dino kale.

2 tablespoons extra virgin olive oil

1 Chocolate (12-ounce) package semisweet or dark chocolate chips

Wax paper

Directions

Preheat the oven to 350 degrees F.

Toss the kale with the olive oil and spread out on two baking sheets.

Roast for 8-15 min, or until lightly browned and crispy.

Let cool.

Put the chocolate into a heatproof medium bowl. Fill a medium saucepan with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowl of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolate in a microwave at half power for 1 minute, stir and then heat for another minute or until melted.)

Place kale on wax paper and use a spoon to drizzle chocolate lightly over kale. Let chocolate cool and harden before serving.

PhotobucketIn our home we’ve always used washable cloths for wiping sticky hands and faces at the table. It just makes sense when you have three little messy eaters! I can’t imagine the amount of paper napkins we would have gone through in the last 6 years.

Lately though, I was wishing for some prettier options. Old wash cloths are certainly functional, but they don’t quite have the appeal of a pretty napkin. The cloth napkins that I recently received from Charlotte Handmade are an easy way to add elegance to an otherwise everyday meal.

To be honest, I’ve kind of been saving my napkins, thinking it would be nice to use them for a more special meal.
